A delicious summer soup
This year we have two cucumber plants in the vegetable garden that produce a lot of delicious cucumbers. This refreshing cold cucumber soup is a favorite during hot days!
3 cucumbers, peeled, without seeds, diced.
A good shot of good (Greek) olive oil
A good dose of dill, fresh or dried
500 ml. Greek yoghurt
2 tbsp. horseradish puree
3 cloves of garlic
lemon juice to taste
2 bouillon cubes + possibly some salt
1/2 chili pepper or pinch of cayenne pepper
Puree all this in the blender or with a blender. Get well cold, if necessary. serve with an ice cube and a sprig of dill and / or some finely chopped cucumber.
